You know those nights where you get home after work and realize that you're starving and want something really satisfying/maybe a little bad for you/okay really bad for you/burger/chinese/pizza ASAP!!!!?? Well I get those nights a lot. But eating junk makes me feel awful and blown up like a balloon. So I keep my distance in general by making easy delicious dinners mostly inspired by Sarah Yates of A House in the Hills. I live vicariously through her amazing Californian photographer lifestyle blog. She has great, fresh recipes on her site and this one has been a major hit in our house. It literally takes 10 minutes. I of course made a lazy girl's version. I've never been one to follow directions so here is my version which includes a peanut sauce....

What you need:
One Package of Soba Noodles
Two Scallions Chopped
One Large Carrot Peeled with a Vegetable Peeler (or cheese peeler in my house)
Black Sesame Seeds
Step 1: Make Your Peanut Sauce like a Champ
(chef bro Nelson walked me through this stupid easy peanut sauce how to- great to drizzle on top of the noodles....or anything else)
Get a skillet
Turn the burner on low
Pour in a little soy sauce (about 3 tablespoons)
Plop a heaping tablespoon of peanut butter in the skillet
Stir until it become a sauce- you can add water if it's too thick
Do not leave the skillet or it will burn!
Step 2: Do the following...
Boil the noodles - this takes just a few minutes
Drain and rinse the noodles
Toss the noodles in a bowl with about a tablespoon of sesame oil, chopped chives, carrots and as many sesame seeds as you would like. Then drizzle peanut sauce on top and ENJOY! This dish HITS THE SPOT. Pretty guilt free indeed.
