whoopie pie love

Valentine's Day is a great holiday to get all homemade with your bad self. Why not save a little dough and make a big impact with some homemade heart shaped whoopie pies. I had an hour to kill yesterday and wanted to see if I could pull out some Martha Stewart skills and look at that! I pulled it off! Here's how....

Mix up some red velvet box cake mix. Easy.
Next, place a piece of parchment paper on a sheet pan and draw multiple hearts using a pencil and stencil of your choice. I cut a heart out of leftover wallpaper and traced around it. Once you are finished drawing the hearts, flip the paper over so that the lead is face down on the pan.

Next, fill in each heart with some batter. You can do so with a small spoon or piping tool.
They don't have to be perfect as you can see...

Bake at 325 degrees for about 10-12 minutes. These cook quickly as they are thin!
While the hearts are cooking you can make your cream cheese icing.
1 block of cream cheese, 2 cups of powdered sugar, 5 tablespoons of butter and 2 teaspoons of vanilla extract. Combine and blend baby!!
Once the hearts have cooked, let them cool on a rack for about 10 more minutes.
Then spread the icing on the flat side of each heart and cover with another heart.
And there you have it. Eat your heart out.
