chocolate pistachio vegan deliciousness

I am in no way vegan. I love me some fried chicken on the reg but when I can trick myself into eating something that could be categorized as raw and vegan and tastes like a sinful chocolate ad,  I do. And who wouldn't? Especially when you can shove chocolate truffles into your mouth and smugly say, "Oh it's vegan." before snagging two more.  I don't know how healthy these pistachio covered chocolate bites of heaven are, but they've got to be better than the usual processed candy bar. And they look like a fancy, unexpected desert that deserves to be photographed and blabbed about on a blog.  The best part? This recipe is the easiest thing ever. Dive in ladies. And pat yourself on the back. It's vegan after all.

What you need:

18 Dates, pitted
1 teaspoon of vanilla extract
1/2 cup of organic cocoa powder
1/2 cup of all natural smooth peanut butter 
1/4 cup of vanilla almond milk
Crushed nuts of your choice - pistachios, peanuts, almonds - your call

What you do:
1. Combine the dates and vanilla in a food processor until it gets to a paste texture
2. Add all other ingredients except for the crushed nuts and blend
3. Roll out little balls of the mixture into the crushed nuts and line on a plate or baking sheet
4. Let truffle balls sit in the fridge for about an hour before serving so the flavors really combine
5. Eat up and enjoy!
