Two recipe posts in one week.
Things are getting crazy around here! Actually, things have been pretty quiet this week but we gotta use up the veggies that land on our front step every week thanks to From the Farmer. That, and I have to counteract the Cinnamon Toast Crunch I had for dinner last night instead of going to barre class. Why do I turn into a 12 year old and eat any junk food in our house when the husband is away on business?? WHY! WHY? WHY?!
I ate this gazpacho for breakfast and it was delicious. You can also enjoy it, like a normal person, for lunch or dinner. Or a snack. The possibilities are endless.
What you Need:
1 and 1/2 large tomatoes chopped
2 small yellow peppers chopped
1 cucumber peeled and chopped
1/2 peach chopped
(basically chop up all vegetables)
1/8 cup of balsamic vinegar
1/8 cup of red wine vinegar
1/4 cup olive oil
What you Do:
Blend it all together in a food processor of your choice.
That's it! This soup definitely doesn't taste like your typical tomato gazpacho but it is delicious in its own way and is of course way better for you than CTC...
